Putting ventilation in my dad’s kitchen

My grandparents owned a diner once upon a time.

This was long before I came around, of course, by the time I was born the place had been closed for years.

That diner was where my dad started working when he was 9 years old, and he worked there until he left for college a decade later. He went on to have a great career in business, but he always yearned for the older, simpler days of cooking food. Now that he has retired and passed the business on to me, I want to return the favor and get him a brand new kitchen. New appliances, new ventilation system, climate control, walk-in fridge, the whole nine yards, because he deserves it! One of my buddies runs an HVAC company, and was able to provide me some valuable insight, as well as quality craftsmanship. I was not aware of how important a good ventilation system is for a kitchen, but I am now. Without a strong range hood or exhaust air vent to pull away the smoke and grease, any kitchen will start losing air quality. A loss of air quality in the kitchen can impact the taste of the food, the performance of the cooking equipment, and also the health of the old man doing the cooking. His lungs were in good shape, and a quality ventilation system would ensure they stayed that way. Now he has a great kitchen with a lot of space, and an HVAC system powerful enough to offset the heating put off by the oven.
